Coconut Curry Meatballs

This is an exotic recipe for curry meatballs, which does not differ much from the way in which this dish is traditionally made, but with a sauce that gives it an oriental touch that will fill your palate with flavor and color.

This recipe can be made in many different ways. We have decided to make it in a pan, to make a sauce with tender and tasty vegetables. But it is also possible to do it in the oven, in order to minimize the use of oil. Or it could even have been cooked in a slow cooker, to get some juicier meatballs. In addition, this dish has enough strength and presence to be used as a single dish, but it is also very common for it to be accompanied with cooked basmati rice.

Ingredients
  

  • 500 grams minced meat
  • 200 ml coconut milk
  • 50 grams breadcrumbs
  • 1 egg
  • 2 tablespoons curry
  • 1 green pepper
  • 1 onion
  • 2 cloves garlic
  • Olive oil
  • Salt
  • Black pepper
  • Wheat flour
  • Celery

Instructions
 

  • The recipe begins with the preparation of the meatballs. Inside a large bowl place the minced meat with the egg, the bread crumbs spread in coconut milk, a pinch of salt and black pepper. Knead well with our hands and form balls with our hands. You can use a spoon to help you get the right size.
  • Next, put a pan with a good jet of oil over medium-high heat. Transfer the meatballs through flour and fry them until they are golden brown and acquire a crunchy texture.
  • Meanwhile, we are peeling the onion, green pepper and garlic into small pieces. When the meatballs are ready, reserve on top of a plate with absorbent paper. And we take advantage of the pan with oil to fry these ingredients.
  • Now, add the meatballs to the pan and let everything simmer for 15 or 20 minutes.
  • Finally, a little cilantro is added as a decoration to taste and ready to eat.
