Meringue milk, or leche merengada in Spanish, is a very refreshing typical Spanish cold drink made mainly with milk and egg whites. But this recipe is healthier and lighter because it does not require the egg whites.
We have already published the traditional recipe of this drink that you can find in this post. But this time we wanted to bring a much more easy and vegan version, cause as said it does not require eggs and you can substitute the milk with, for example, almond or cashew milk.

Meringue Milk (without eggs)
Meringue milk is a very refreshing typical Spanish cold drink made mainly with milk and egg whites. But this recipe is healthier and lighter because it does not require the egg whites.

Ingredients
- 500 ml milk (almond, cashew or other types of milk can also be used)
- 2 tbsps honey
- 1 cinnamon stick
- 1 lemon
Instructions
- Wash properly the lemon, remove its skin and save it.
- Place the ingredients altogether in a saucepan and bring them to a boil over medium heat. Stir sometimes to make sure the honey melts and let the different flavors mix.
- Remove the saucepan from the heat, cover it with a cloth or a dish and let the mix chill for 10 minutes.
- Finally, remove the skin of the lemon and the cinnamon stick. You can now serve the drink at room temperature or, preferably, store it in the fridge for about an hour or until it is cold.
