Equipment

  • 1 Bowl
  • 1 Whisk
  • 1 Cake mold 22cm

Ingredients

  • 180 grams wheat flour
  • 150 grams butter
  • 50 grams sugar powdered
  • 1 egg
  • 1/2 tsp salt

Cream cheese filling:

  • 200 grams cream cheese
  • 50 grams sugar

Apple filling:

  • 3 apples
  • 50 grams sugar
  • 50 grams sliced almonds
  • 1 tbsp cinnamon powder

Decoration:

  • Powdered sugar

Instructions

For the base:

  • Line a 22 cm mold with parchment paper and grease the sides with butter.
  • In a bowl, mix the flour, sugar, and salt. Add the butter little by little, using your hands, and continue mixing until you obtain a homogeneous dough.
  • Press the mixture into the mold, shaping the base and creating a 2 cm border on the sides. Then, refrigerate it while you prepare the filling.
  • Preheat the oven to 230°C (450°F).

For the cream cheese and apple filling:

  • Beat the cream cheese, sugar, and vanilla together until smooth. Set aside.
  • Peel and slice the apples into thin pieces.
  • Mix them with sugar and cinnamon in a large bowl.
  • Pour the cream cheese mixture onto the chilled base and top with the apple pieces.
  • Sprinkle sliced almonds over the apples.

Baking and serving:

  • Bake at 230°C (450°F) for 10 minutes, watching the almonds closely.
  • Once the almonds are toasted, cover with foil and lower the temperature to 200°C (400°F). Bake for another 30 minutes.
  • Let the pie cool on a rack and remove from the mold. Dust with powdered sugar and serve warm or cold.

Recommendations

  • Use Golden or Granny Smith apples, as they are the best options for this type of pie. Golden apples are sweet and soft, while Granny Smith apples add a tangy touch that contrasts well with the cheese.
  • For a special touch, serve the pie with a scoop of vanilla ice cream or a bit of whipped cream. The combination of warm pie with something cold and creamy is spectacular.
  • Make sure not to leave the almonds in the oven for too long, as they can burn quickly.
  • Ensure the apples are evenly distributed over the cream cheese, but don’t overload the pie. Too many apples can make the pie too moist.
  • If you like an extra hint of flavor, you can add a bit of nutmeg or ground ginger to the apple filling. This will complement the cheese and almonds nicely.
  • For a crunchy and crumbly base, it’s important that the butter is very cold when mixing it with the flour. This will help the dough crumble properly. You can also refrigerate the dough after forming it to prevent it from deforming during baking.
