First, we start by cooking the quail eggs, since it is the ingredient that requires the most time to prepare. Being so small, in 4 minutes over high heat we will have them ready.
Meanwhile, wash and cut the cherry tomatoes in half.
When the eggs are ready, we pass them through cold water and peel them carefully, without breaking them.
Finally, we place the ingredients on each toothpick in the following order: a cherry tomato half, an anchovy at one end, the egg, the opposite end of the anchovy, and another tomato half.
We serve the bites on a plate and drizzle a little olive oil on top.
